
Honey Spelt Rosh HaShanna Cake
We made this for this past Shabbat as a "trial" for Rosh HaShannah. It came out moist and delicious.
- 1 and 1/4 cups (175g) spelt flour (we used 80%, can you use 100% or Whole Wheat)
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves if you like more spice and or nutmeg
- 2 large eggs
- 1/2 cup (100g) demerara sugar
- 1/2 cup (120 ml) honey
- 1/3 cup (80 ml) oil
- 3/4 cup warm tea
- 1/2 teaspoon vanilla extract
The batter is very liquidy. I poured it into a cake mold (I used a silacon bundt) and baked it on 180°C/350°F for about 45 minutes. Check it after 35 and keep checking it until you see that the batter has set and no longer jiggles. Stick a toothpick in it and it should come out clean.
Practical tips for healthy quick snacks for the busy woman:
Hard boiled egg with a cucumber and tomato-vegetable sticks
Natural Yogurt with seeds
Dates with almonds and nuts
Rice cake/whole grain cracker with raw sesame seed butter (tehina)/almond butter/peanut butter/avocado
Piece of fruit
Omelet (egg with zucchini, vegetables, etc.)
Raw vegetables with raw sesame seed butter (tehina)/almond butter/peanut butter/avocado
Oats, date silan, coconut butter bars (mix 3 cups of oats, 1/2 cups of date silan, 1/4 coconut oil, cinnamon-heat over stove top to mix, bake for 10 minutes in the oven. Let cool and break into granola bars)

Gluten-Free, Nut-Free, Dairy-Free, Sugar Free! Chalva fudge
These are a delicious source of calcium and iron!
1 ripe banana
1 cup unhulled tehini paste
3/4 cup cold water
1/2 cup sugar free silan (date syrup-or you can use maple syrup or raw honey)
1/2 cup unrefined organic coconut oil
Blend together and spread onto a pirex. Free and after about an hour cut squares. Refreeze until ready to eat. Yum!
Gluten-Free Carob, Peanut Butter, Banana Muffins

Yum! We're trying to cut down on gluten and in addition these are a protein-packed delicious treat for all of you who are looking for chomet- free options for the pre- Passover weeks ahead!
Mix together:

1 mashed banana
1 cup of finely ground garbanzo flour
1 tsp non-aluminum baking powder
1/3 cup of carob powder (or cocoa for those chocolate obsessed)
Put in muffins pan, bake at 180 C for about 20 minutes.
Mix together:

There is a tradition from the Rebbetzin to say the following Psalms throughout pregnancy for an easy birth.

(Sugar Free, Low Fat, Vegan, Parve, Full of fiber, manganese, zinc, selenium, phosphorus, magnesium, vitamin B1, B2, B3, E, folic acid, and other good stuff!)
1/3 cup of olive oil
2/3 cup of non-sweetened apple juice concentrate
2 TB ground flax-seed
chocolate chips (raisins, craisins-be creative)
1 1/2 cup of whole oats
1 1/2 cup whole wheat flour
1 tsp baking powder
1 tsp cinnamon
First mix the wet ingredients, then the dry, add it all together, Bake at 180 for 15-20 minutes in a preheated oven.
Cut into bars, enjoy!

Halva Sorbet

This was a yummy treat I blended up- It's full of Calcium and Iron and is a refreshing treat for the summer.

Silan (Pure Date Honey-nothing added)
Water
Hand full of chopped dates
I'm not sure of the exact measurements. I put about equal amounts of the Tehina and Silan in the blender, added a good water and some chopped dates. Blended and froze. It came out soo good :)

Date Truffles (Kosher for Passover and delicious all year round!)

1 cup of Medjol dates-pitted and checked for bugs
2 TBSP of cocoa
1 tsp of cinnamon
Finely blend the almonds, add the dates, cocoa and cinnamon into the blender or food processor. Blend and mix. Form small balls and that's it! Keep in a container in the refrigerator until ready to eat (if they last long enough!)

Syrian Iron-Building Soup

This one is a traditional Friday night Shabbat soup/stew at my mother-in-law's home (and ours too :) ). It is a simple and delicious soup packed with lots of iron rich greens and meat balls. Like everything we make, we don't have exact measurements, but here is more or less the amounts of each ingredient. Quantity doesn't matter-the soup is delicious and it will turn out great. I serve this with brown rice, but it's filling enough on its own.
1/4 kg (1/2 lb) of ground meat (if you can-non-processed, organic). Form small meatballs with the meat.
9 zuccins, cut into 4 length-wise and then chopped into 1" pieces
1 large potato cut into 4 length-wise and then cut into 1" pieces
1 handful/bunch of fresh cilantro, thoroughly washed and blended (chopped)
1 handful/bunch of fresh parsley, thouroughly washed and blended
1 head of celery stacks, cut into 1" pieces
Juice of 1 large lemon
Sea Salt to taste
Place all the ingredients in large pot except for the meatballs. Mix it all together. Put the meatballs on top. Cover with water. Bring to a boil. Let cook on low heat covered for at least an hour to absorb all the flavors. Serve as a stew over rice or as a soup. Enjoy!

Spicy Walnut Dip

- Soak 1 cup of walnuts in cold water for 3-4 hours. (You're sprouting them to get the most nutritional value out of these incredible treats that are packed with Omega-3, Protein, Fiber, Magnesium, Antioxidants and more. Walnuts are great for the heart, brain, sperm, prostrate, fertility, diabetes, and heart disease.)
- Saute a diced/chopped onion in a slash of oil oil.
- Add a 1/2 tsp of cumin, 1/2 tsp of spicy paprika, salt to taste and blend it all until just mixed, but not pureed.
Indigestion/Constipation

Are you drinking enough water? Drink at least 8-10 cups of water a day to help avoid constipation and assist with efficient elimination of and dilution of normal toxemia from cellular and digestive breakdown. In order to prevent indigestion try drinking your water either 1/2 hour to an hour before meals and 1-2 hours afterwards. This is especially true of cold beverages. When you drink and eat at the same time you wash away digestive enzymes and acid which aid in breaking down food and digestion and you encourage fermentation in the stomach which leads to acidity and toxemia.
Shortening your period/length of bleeding

For women who have a difficult time making a hefsek tehara try the following from the first day of menstruation until you are clean/stop spotting or bleeding:
- Upon waking up drink a cup of water with a freshly squeezed lemon
- Take 500 mcg of Vitamin C in the morning
- Take 400 mcg of Vitamin E in the afternoon
- Take 500 mcg of Vitamin C in the evening
